Fuller Is New Riviera Country Club Restaurant Manager

Thomas Fuller has become the new restaurant manager at the Riviera Country Club, after gaining broad experience at the Penrose Room, the only 5 Star, 5 Diamond restaurant in Colorado.

Penrose is located in the Broadmoor Resort at the base of Cheyenne Mountain, just outside of Colorado Springs, near Pike’s Peak.

Certified as a Court of Master Sommeliers, Fuller managed wine and beverage costs and inventory training, evaluating and coaching staff, and implementing effective strategies to achieve and exceed established top-tier service standards at the Penrose.

“We welcome Thomas to our Riviera management team,” said General Manager Don Emory. “With his respected experi- ence and dedication for hospitality excellence, he will truly magnify our focus on quality service.”

According to Emory and Riviera Executive Chef Simon Lewis, Fuller will be in charge of member dining, The Dining Room (TDR) service and the TDR bar, working closely with Club Services Super- visor Antonio Soto.

Fuller has relocated to California with his wife and three children.
